HANU, a new wave of contemporary Korean cuisine, invites to an exclusive one-night collaboration with acclaimed chef Robin Höfer — a celebration of two culinary philosophies united in a 12-course tasting menu. Taking place on the 21st of June at HANU’s intimate Chef’s Table, the evening will explore the intersection of Korean heritage and modern European finesse through refined technique, creativity, and cross-cultural dialogue.
Robin Höfer, whose training spans MICHELIN-starred kitchens across Europe and a prominent role at Dubai’s Ossiano, brings a signature style shaped by nature, memory, and technical precision. His refined approach meets HANU’s bold expression of Korean heritage, rooted in storytelling, discipline, and elevated craft.
“It’s interesting to see how Chef Robin interprets Korean ingredients with his own twists,” says Chef Kyung Soo Moon. “The Chef’s Table at HANU offers an opportunity for us to do something new and present a special dining experience for the guests.”
Together, the chefs will create a 12-course menu that showcases refined textures, bold contrasts and creative technique. Highlights include Golden Egg with Sago Pearls, Carabinero, Coconut and Gochujang; Kimbab with Crispy Nori, Korean Rice and Salmon Roe; Hamachi with Corn, Coriander, Kimchi and Leche de Tigre; Patagonian Toothfish Tempura with Ajiso broth and sea Urchin; and Kobe Striploin with Galbi Glaze, Wasabi Kimchi and Traditional Banchan. The final courses include Korean Pear with Black Lemon and Ginger, Omija Apple Blossom, and a delicate Dasik to conclude.
“This menu connects the dots throughout my life and career — from foraging in the forests of Überlingen as a child to exploring the kitchens of Mastumoto and the flavours of the Middle East,” says Chef Höfer. “This collaboration has given me the opportunity to discover Korean cuisine and ingredients, and I can’t wait to bring our combined vision to the table.”
Hosted at HANU’s exclusive Chef’s Table, the dinner will feature two seatings — at 6 PM and 9 PM — limited to just 10 guests per session. The experience is priced at AED 750 per person and available by reservation only.
