HANU invites guests to a one-night collaboration with Singapore’s acclaimed restaurant-bar Side Door, led by award-winning mixologist Bannie Kang and celebrated chef Tryson Quek. Taking place on the 9th of September at HANU’s intimate Chef’s Table, the evening will unite two culinary philosophies in a nine-course Omakase menu paired with a specially curated cocktail selection — blending Korean heritage with bold modern Asian flavours.
Side Door, ranked No. 53 in Asia’s 50 Best Bars 2025, is co-led by award-winning mixologist Bannie Kang and chef Tryson Quek. Bannie, named Best Bartender of Asia 2021, brings an inventive approach to mixology inspired by her Korean roots, medicinal influences, and refined technique. Chef Tryson, celebrated for his modern fusion cuisine and precision plating, brings more than 15 years of international culinary experience, blending classical training with contemporary creativity. Together with HANU’s Chef Kyung Soo Moon and Bar Manager Melanie Tuy, they will craft a one-night experience where food and drink are designed to be in perfect dialogue.
“This collaboration is about more than two kitchens and two bars coming together, it’s about creating a shared experience that unfolds course by course”, says Chef Kyung Soo Moon.
The menu will present a seamless interplay of HANU and Side Door signatures. From Side Door, guests will experience Beef Tartare, Ugly Duckling, Wagyu Short Ribs, Sweet Potato, and a delicate Petit Four. From HANU, the line-up includes the refined Gujeolpan – Platter of Nine Delicacies, Kimchi Tart, Truffle Kimbap, Chilean Seabass, and the signature Jang Trio and Omija dessert — each course reflecting the distinct identity of its creator while harmonising within the overall experience.
The nine-course Omakase will be paired with three cocktails from HANU, each crafted to complement the menu’s flavours. On the day, all guests will also have access to a special cocktail insert featuring six signature serves — three from HANU and three from Side Door — each priced at AED 65. Highlights include Side Door’s Seaside, a fresh and tropical creation with herbal notes, and One for the Road, a rich, bittersweet blend with an espresso twist; alongside HANU’s My Cup of Tea, a delicate infusion of botanicals and yuzu, and Old but Gold, which layers ripe fruit with the depth of aged rum and a touch of gold.
“We’re excited to bring a taste of Side Door to Dubai and work alongside HANU’s team,” says Bannie Kang. “From the bar to the kitchen, every element of this evening has been crafted to surprise, delight, and connect with our guests.”
Hosted at HANU’s intimate Chef’s Table, the dinner will feature two seatings — at 6 PM and 9 PM — limited to just 10 guests per session. The experience is priced at AED 595 per person (excluding cocktails) and available by reservation only.
